Microwave Pork Tenderloin


For this meal, a meat thermometer, a rolling pin and waxed paper is needed. The pork has to be at least 160 degrees Fahrenheit to be properly cooked. Serves 4.

4 pieces of pork tenderloin
1/2 teaspoon of dried thyme
1/4 teaspoon of pepper
1 cup of Cauliflower
Dash of Chives
6 teaspoons of apricot preserves

Step 1: Flatten each pork tenderloin into 1/4-inch thick between waxed paper using the rolling pin.

Step 2: Sprinkle thyme and pepper on each tenderloin and wrap in waxed paper.

Step 3: Place pork seam-side down on a microwave safe plate and cook for 1 to 1 1/2 minutes per tenderloin until it’s warmed.

Step 4: Place cauliflower on the plate next to the pork, sprinkle cauliflower with chives.

Step 5: Spoon apricot preserves over pork. Cover with wax paper and microwave until pork is done and cauliflower is tender, about 3 to 3 1/2 minutes.
